Ricotta Cheesecake
This Italian ricotta cheesecake is light, soft, and easy to make, like the classic cheesecake. This is especially good if you are looking for a healthy, gluten-free creamy cheesecake that is a mix between New York cheesecake and the Burnt Basque cheesecake.
In a large bowl with an electric mixer, mix the 125 gm of fresh ricotta cheese, three eggs, and ¼ cup of sugar. Keep mixing until the batter is creamy, but do not overdo it.
Next, put parchment paper in a cake pan and grease it well with a little butter. Pour the batter and bake it for fifty minutes in 170 to 180 degrees Celsius.
Once it turns golden brown, take it out of the oven and let it cool down completely. Refrigerate for a few hours and decorate with fresh berries and powdered sugar (optional). Then, it is ready to be served.
Italian Lemon Ricotta Cake
Preheat the oven to 180 degrees Celsius. In a 9 inch cake, put the parchment paper, grease it with butter and powdered sugar, and keep it aside.
Next, in a large mixing bowl with an electric mixer, put ¾ cup of softened butter 1½ cup sugar and mix well. Then add 15 ounces of ricotta cheese and blend well until it is fluffy and light. It can take about four to five minutes to reach consistency.
In the batter, mix three eggs, one at a time. Then add a teaspoon of vanilla, lemon zest from 1 large lemon, and the lemon juice.
Next, add ½ teaspoons each of baking powder and salt. Mix them well and lastly add 1½ cup of flour. Combine it well, scrape down from the sides of the bowl and mix it well.
Pour the batter into the cake pan and bake it for 44 to 55 minutes. Check it by inserting a toothpick in the middle. If it comes out clean, take it off the oven and let it cool for fifteen minutes.
Now take it out of the pan and dust it with powdered sugar before serving.
Vanilla Ricotta Desert
This three-ingredient dessert is super easy to make and much yummy to eat. It can also be made into low-carb and keto.
In the food processor, add the fresh full cream ricotta cheese, powdered sugar or honey as per your taste, and pure vanilla extract. Mix it well in the blender for at last two minutes. It needs to be light and fluffy. A word of caution, too much mixing can break it, so one shouldn't don’t overdo it.
Refrigerate for at least an hour before serving. You can add fruits and nuts on the top too before serving.
